Tweaked this recipe from an online source- we have been making it to use up some of my fiance's mom's rhubarb. It's really moist, and best on day 1 (either with some good vanilla ice cream or tasty vanilla yogurt). I think it would adapt well to use with eggbeaters, splenda for baking, and fat free sour cream.
Rhubarb Cake
2 cups flour
1 1/4 cups sugar
1 tsp baking soda
1/4 tsp salt
1 cup sour cream (or yogurt)
2 eggs
splash vanilla
zest of 1 orange (optional, but very delicious addition)
3 cups diced rhubarb
Topping:
1 cup sugar (brown or white)
a hefty dose of cinnamon
1/4 cup butter
1/4 cup flour
To make topping, cut butter into dry ingredients with pastry blender and set aside
To make cake: stir together dry ingredients in medium bowl. Stir together wet ingredients in separate bowl and then add to dry. Mix together (will be thick) and fold in rhubarb. Place in greased/floured 9x13 pan and top with topping. Bake at 350 for 45 minutes.
The version I came up with this afternoon is equally delicious if you don't have any rhubarb on hand!
Blueberry cake
2 cups flour
3/4 cup sugar
1 tsp baking soda
1/4 tsp salt
1 cup vanilla yogurt
2 eggs
zest of 1 lemon
2-3 cups blueberries (I used frozen)
Topping:
3/4 cup brown sugar
hefty dose cinnamon
1/4 cup butter
1/4 cup flour
Topping made in same way as above, and I put some walnut halves on the cake too.
Cake made in same manner as above (wet stirred together, dry stirred together, combined, fold in blueberries, bake in prepared 9x13 pan). Since I used frozen blueberries I baked 50 min at 350. It is fantastic! I may try strawberries next!

That sounds so good, and I really love rhubarb. I bet it would be good with black raspberries (my favorite berry) too.

How's this for irony?
I went into Bird in Hand yesterday, purchased 2 bushels of fresh cut rhubarb on the side of the road, on a whim. Driving home yesterday thinking "where can i find the best rhubarb cake recipe" and today, bang here's my recipe. I am going heavy on the rhubarb because I LOVE IT. :-)

I know nothing at all about rhubarb, but I was interested to see a sheet of recipes for various rhubarb delights offered at a self-serve farm stand to rhubarb purchasers. I decided to stick with the strawberries I had come to buy. What does rhubarb taste like, anyway?

It depends on the rhubarb, but typically rhubarb is sour and sweet, it's a combination of fairly strong tastes. It is porous, and what you bake it in will alter it's taste, and I've liked dicing it and soaking in some mike/honey/cinnamon before baking with it. I'm curious if others have similar experience with it.
