You are no longer permitted to climb Chichen Itza. The other advice is good though. Most of the resorts have tour companies right inside the resort. If you stay at Occidental Grand Excaret you will get a one day free admission to Excaret park. You can swim with the dophins there if you want.
We did a snorkling trip outside the resort that included a lagoon, a cave, and a place that started out in fresh water and went out into the ocean.
Just checkout what tours are offered by the companies inside your resort.

if you have the means i recommend you hire a private tour guide to drive you chichen itza. it's quite impressive and if you are taking kids along you can use the ruins to show them what happens too things when you don't take care of them.LOL
if you take the bus tour you will be stuck there all day. if you hire a driver you can explore the ruins in a few hours and then get back to the beach. if you stay at one of those hotels that have a bar by the pool so you don't have to get out to get a drink, stay away from the guy who has been drinking all day and not leaving, he is pizzing in the pool.
also if you get a chance buy a the biggest bottle of vanilla that you can find, it is the absolute best. "mundo tropical" is the best that i have found and it was sold by some ladies outside the ruins of tulum.you can't buy vanilla that good here.
also if you so inclined you can buy cuban rum. havana club 7 year old is the worlds best. stick it in you suitcase instead of carryon and when you sign the declaration just write "2 bottles of liquor", don't mention rum.
also be sure to check when the spring breakers will be there. you do not want to go when they are there.

I was pretty disappointed when i saw that you can't climb it any more. I wanted to take photos from up there, looking down. My sweetie and I are the only ones going this time, and he's already been to Chichen Itza, so we will probably do a combination of two of either Tulum, Xaret, Xel-Ha. I'd like to see them all, but now I'll have a reason to go back again.

Yeah, I was checking out the Xcaret website, and I'd love to do the snorkeling, but could pass on the other stuff. We are looking at ruins as our primary interest because we have such a short amount of time. I'm going to check out Coba and Tulum. If they are close, i think we'll just get a private tour guide and do them in one day, then party in the pool/beach the next.

What happens if you declare rum?
Nice tip about the guy at the pool/bar, btw.

It will be interesting to see what the camera picks up at the ruins. If it's has as much activity as Salem did, it's going to be great. I'm pretty excited about the whole thing, but we have to get it all together in 11 days.
Reminds me of Ron White's story about "tubing". Ewwww.

Please post pictures when you get back. I don't think I'll ever be able to talk hubby dear into going there and I'd love to see it.
And have a great time!

i don't know. actually you may not be allowed to carry bottles of liquour on carryon since 9/11? i once had 2 bottles of cuban rum on my carry on bag and the customs guy just looked at the seal to make sure it wasn't broken and didn't even look at the label.
i believe it is illegal to bring in cuban rum so do so at your own risk although all they do is take it from you if they find it.
as for the pool i wish they had some chemical in there that would turn fresh urine a bright color red.LOL
